The combination of the Japanese words matsu, "to rub, to daub, to paint", and cha, "tea", results in matcha tea. The tea is produced following strict regulations. In the 1100s, a Zen Buddhist monk brought the tea seeds back from China, introducing matcha to Japan. He established a tradition of the "way of tea", which involved the precise preparation of tea as an act of devotion to the beauty found in an otherwise imperfect world. As was customary at the time, the tea used in the ceremony was powdered and whisked with a bamboo brush into boiling water, allowing for consumption of the tea leaves along with the frothy water, rather than straining them out as with steeped tea.
Matcha offers a unique blend of nutty, grassy flavors with a subtle bitterness. It has gained popularity beyond its origins and is now available in health food stores and coffee shops worldwide.
